So why would you ever stop using one?
Because spreadsheets are great at being spreadsheets, but terrible at being QA platforms. The gap is invisible when your team is small and your testing is informal, but it widens with every feature, every tester, and every release cycle until the spreadsheet becomes the bottleneck it was supposed to prevent.
